Something Tasty
I don’t know about you but I love homemade nachos…..and I’m not talking about dumping a bag of chips on a plate and covering them with cheese. I’m talking about making your own chips and then adding the goodies you love. Let’s make some nachos….
You will need (the amount of each ingredient depends on the amount you are going to prepare and what you like):
- Ground meat of choice
- Homemade or Packaged Corn Tortillas
- Refried Beans – can be either canned or homemade
- Grated Cheese of choice
- Onion, Lettuce, Tomato
- Jalapeño Peppers – I have used both canned and fresh….whatever is available will work.
- And your choice of any other toppings
You can make your own corn tortillas if you are really industrious and creative; I started with a package of corn tortillas…..the kind you can find in the specialty food aisles of grocery stores.
With a pair of cooking shears……or knife, cut the tortillas in half……
Yea, I know ~ I can’t cut straight. 🙂 Take one half and cut it into thirds…….
Repeat until you get as many chips as you would like. You should have a nice pile of uncooked tortillas, waiting to become chips…..
In a large pan, add enough oil of choice (I generally use olive oil) so that the tortillas will be covered when you are cooking them. Keep in mind that if you are going to do more than one batch, you may need a little extra oil to begin with……
Cook until golden brown, flipping the chips with tongs while they fry…you want them stiff but not too crispy. Drain on a paper towel to absorb leftover oil (you way also want to blot the tops with another towel while they are draining on the plate). If you would like to salt the chips, do so at this time. Continue until all your chips have been fried…
Transfer the chips to a large plate or platter…..or smaller, individual plates….your call….
Layer the chips with seasoned meat of your choice…..I have used ground turkey that has been combined with a taco seasoning mix……..
Now pile on the goodies….refried beans along with some jalapeños and onions…..
Lightly drizzle with your favorite Mexican sauce and top with cheese. I used a mix of different Mexican cheeses…..
Now, place in a microwave oven, or conventional oven ~ just make sure you are using an oven safe platter ~ and heat until the cheese is melted. Remove and drizzle another light layer of your favorite Mexican sauce ….
Top with fresh lettuce, tomatoes, guacamole and/or sour cream (which I did not)…….
This isn’t the only way to make them, but it works for me. Dig in……..and Enjoy! 🙂

Just solved my little problem, I’ll log into your blog when I’m away to my son’s and my DIL and I will cook them together, they love Mexican food so that’s one meal sorted! Thanks Debbie that was so timely.
