Potato Goodness

There are many different ways to make potatoes.  Everyone has a personal favorite, and this one ~ my new all time favorite.  These potatoes are melt in your mouth delicious.  The recipe is originally from The Pioneer Woman’s site….one of the many tasty treats she offers.  Again, the recipe is hers, the photos are mine. 

Potato Bundles

Russet potatoes, cut into chunks
Yellow or white onion, cut into chunks
Butter (regular, salted)
Heavy cream
Kosher salt
Paprika
Freshly ground black pepper
2 tablespoons minced parsley (I didn’t have parsley so I omitted it this time)

Making Potatoe Pockets

Gather all your ingredients together…….dice potatoes and onions into large chunks…….

Dice Potatoes

Tear off several pieces of aluminum foil and add potatoes and onions, enough for one serving in each piece of foil.  Add a couple of small slices of butter…..sprinkle with kosher salt and paprika.  Splash on a little cream, not too much but enough to add a nice flavor….add minced parsley (optional) and finish up with a dusting of fresh pepper. 

Spice Them Up

Roll up the foil packages and bake.  There was no temperature indicated on the recipe, but I have baked mine at about 375 degrees for roughly 40 minutes and they have come out fine.  I guess it would all depend on how large your potato chunks are. Mine were about an inch cubed I would guess.

To serve, place packet on your plate and open carefully.

If you do decide to place them directly on your plate, my daughters and I found the butter cream sauce was a bit to rich so we spooned ours out.  Of course, that is all personal preference too.

Doesn’t that look delicious?  This is a great side dish….I have served it with chicken and pork.  Make these tonight ~ you won’t regret it!

    Here in the UK potatoes are served with everything so it’s great to find a new way of cooking them. I love them cooked in cream so I know this is a winner. Keep them coming!
