    Outside my window…is a Monday rather than a Sunday.  Maintenance on the sight last night prevented me from posting when I wanted to….I was exhausted and decided it would need to wait until today.  🙂  I worked hard during the holidays and my time off….from preparing a  Thanksgiving dinner from start to finish for the first time in over twenty years to my endless fall cleaning to putting up and decorating the Christmas tree.   The holiday started off rather cool but ended unseasonably warm.  Our average for this time of year is 57°F….our high temperature yesterday was 70°F.  Currently {at noon} it is 71°F….and our high is forecast for…

    Things that made me smile this week

    Looking through my old photographs…. and discovering some I had forgotten about…. Discovering I will have two more tomatoes ready to eat very soon… ….and harvesting some herbs. Enjoying my first tomato of the season with some basil from my garden… two farm fresh eggs from my friend scrambled with feta cheese and basil…heavenly. The tomato was wonderful! Welcoming another summer solstice… What made you smile this week?  🙂

    Breakfast Burrito

    A quick and easy meal for breakfast tomorrow….you will need eggs, your favorite breakfast meat, cheese, taco sauce or salsa and flour tortillas.  Begin by scrambling some eggs. Add a bit of cooked, chopped bacon ~ sausage ~ or your breakfast meat of choice when the eggs are close to done.  Heat up enough burritos for your meal by placing the flour tortilla in a damp paper towel and place in microwave for about 20 seconds…just enough to warm them.  Turn the corners of the paper towel inward and roll from the bottom up.  Once the tortillas are heated, place a spoonful of your mixture in the center of a flour…

    Artichoke Frittata

    Thanksgiving tomorrow…Christmas around the corner….hectic mornings with lots to do.  My very good friend Sharon turned me on to this dish years ago…something she served her family for breakfast Christmas morning.  And folks, if you like eggs, artichokes, onions and cheese ~ you are going to love this!   🙂  Best of all, it takes only a few minutes to prepare.  I like to enjoy mine with chopped tomatoes on top…or sometimes salsa.  As far as the cheese….I use sharp cheddar, but I would think you can substitute for your personal favorite.     Wouldn’t you love to have farm fresh eggs available to you?  A couple of months ago a friend at work offered me just that.  He and his wife had purchased some land and built a house a couple of years ago.  In the fall of last year, they decided to add chickens to the mix.  And with chickens, you hope to get eggs…..they were not disappointed.   But the eggs kept coming….quicker than he or his wife could eat them.  So they each went in to work one day and asked their friends if anyone would be interested in free eggs from free roaming,  organically fed chickens.  The only stipulation, you had to bring your own…
