    Artichoke Frittata

    Thanksgiving tomorrow…Christmas around the corner….hectic mornings with lots to do.  My very good friend Sharon turned me on to this dish years ago…something she served her family for breakfast Christmas morning.  And folks, if you like eggs, artichokes, onions and cheese ~ you are going to love this!   🙂  Best of all, it takes only a few minutes to prepare.  I like to enjoy mine with chopped tomatoes on top…or sometimes salsa.  As far as the cheese….I use sharp cheddar, but I would think you can substitute for your personal favorite.     Well……

    Remember this…..my beautiful, almost ripe tomato?  The one I was so patiently waiting to fully ripen so I could enjoy tomato-ey goodness….my very first ripe tomato of the season.  I could taste it…..it was going to be perfect.  So I head outside to get my little red beauty….my perfectly ripened tasty wonder.  I reach down to pluck it off the vine and feel something not quite right on the back side…..so I turn it around and…… ……something beat me to it!!!!!    😡 And that just sucks.

    Random Thoughts….

    There will be a full moon while I’m at the beach this weekend. How awesome is that? I already have photographs formulating in my head…. I hope they work out. I hope to get a few of these while I’m at the beach… nothing like watching the sun rise over the Atlantic. I don’t want to get a sunburn.  😎 I have fallen in love with my backyard… …once again. It happens every year. I have a ripened tomato….well, almost. It will be delicious ~ I just know it.  ‘Cause I grew it….all by myself. There is mad construction going on….all around the building I work in. Why do construction guys with the biggest belly’s…
